It should come as little surprise that Jacob deGrom is favored to win the 2021 Cy Young Award. deGrom has managed to win this award twice already and both times, he had little to no run support. Despite pitching in 68 games and recording 524 strikeouts, he only had 22 wins. The previously mentioned additions should help deGrom improve his low wins numbers which would make him as promising a bet as ever.
Carlos Carrasco, who came over in the Francisco Lindor trade, is a player who finished fourth in the AL Cy Young voting back in 2017. More recently, in the COVID-shortened season, Carrasco posted a 2.91 ERA which would be the second-best of his career. Coupling all of that with switching leagues, you could make worse bets than Carrasco.
The last pitcher to mention for Cy Young consideration on this Mets team is Marcus Stroman. In the same season that Carrasco finished fourth in Cy Young voting, Stroman had finished eighth and won a golden glove. While Stroman, a Long Island native, has had a less than stellar tenure in New York, all of the talk throughout Spring Training has been that Stroman is in the best shape of his life and is looking to return to his All-Star ways.

The biggest acquisition of the Mets offseason, Francisco Lindor, is a stylish-powerhouse who has finished inside the top-10 in AL MVP voting three times. On top of having three straight seasons with 30 home runs and 30 doubles, the newcomer to the Mets has also had two gold glove seasons. Lindor brings all of those accolades into a talented lineup, with +1500 odds, and in search of a big-time contract extension, the sky could be the limit for Lindor in 2021.
Pete Alonso is a player who will be batting right alongside Lindor and in his short career is no stranger to success. In his first full season in the majors, Alonso took the league by storm as he won rookie of the year, the home run derby, hit 53 home runs and finished seventh in NL MVP voting. The abbreviated season was less uneventful for Alonso as he saw his batting average and slugging percentage dip. Speaking to the media during Spring Training, Alonso has attributed those struggles to inconsistencies that came with the COVID-season and has vowed to return to form in 2021.
